MEXICAN CASSEROLE
1/2 medium onion, chopped
3 cloves garlic
1 tbsp. oil
1 lb. ground beef
1 (1 lb) can kidney beans, drained
1 cup water
1 (6 oz.) can tomato paste
1 tbsp. chili powder
1 tsp. salt
1/2 tsp. cumin
1 pkg. flour tortillas
Grated cheese
Preheat oven to 300 degrees F. Oil 2 (9-inch) pie pans.
Saute onion and garlic in oil until translucent.
Add hamburger and brown; drain off excess oil.
Add water, beans, tomato paste, chili powder, salt, and cumin; heat to boil. If mixture is too thin, cook, stirring frequently, until desired consistency.
Layer tortilla, sauce and cheese in each pie pan, beginning with tortillas and ending with cheese. Cover with foil.
Bake for 30 minutes at 300 degrees.
