Recipe: Microwave: Fast Scotch Fudge, Chocolate Fudge, Peanut Butter Squares

The following recipes are from a cookbook called Simply Scrumptious Microwaving. I've made the Scotch and Chocolate Fudge and the Peanut Butter Squares for Christmas gifts in past years. They're all yummy and really easy.
If you like Reese's peanut butter cups, you'll like the peanut butter squares.
Fast Scotch Fudge
12 oz. butterscotch pieces
1 14 oz. can sweetened condensed milk
1 12 oz. jar creamy peanut butter
Microwave butterscotch pieces on high 2-3 minutes until melted. Stir in
other ingredients and cook on high 1-2 minutes longer until bubbly. Pour
in buttered 8-inch square dish. Refrigerate until set. Cut in squares.
Fast Chocolate Fudge
2 1/2 - 3 cups semisweet chocolate chips
1 14 oz. can sweetened condensed milk
1/4 cup butter
1 cup chopped pecans
Microwave chips, milk and butter on 50 to 70% power until chocolate melts, 3-5 minutes, stirring several times. Add nuts and pour into well-buttered 8-inch square baking dish. Refrigerate until set.
Peppermint Fudge: Omit nuts and add 1/8 tsp. peppermint oil.
NOTE: Fast Fudge has a texture of caramels. For a texture change, beat the mixture on high speed with an electric mixer after all ingredients have been added, except nuts, for 3-5 minutes. Chill 5 minutes and beat again to achieve a lighter, creamier texture.
Peanut Butter Squares
1/2 cup graham cracker crumbs
1 cup chunky peanut butter
2 1/2 cups powdered sugar
1 cup melted butter
2 cups milk chocolate chips
Mix crumbs, sugar, butter and peanut butter. Spread in a 9x13 dish. Shield ends of dish with foil. Microwave on high 2 minutes to set. Melt chocolate by microwaving on 50% power for 3-4 minutes. Spread on above mixture while warm. Chill and cut in squares.
