NO-ROLL SUGAR COOKIES
4 cups Original Bisquick baking mix
1 1/2 cups powdered sugar
3/4 cup margarine or butter, softened
1 teaspoon almond extract
2 eggs
1 cup white granulated sugar
Heat oven to 400 degrees F.
Stir all ingredients except granulated sugar in large bowl until soft dough forms.
Shape dough into balls, about 1-inch in diameter;* roll in granulated sugar to coat. Place about 2-inches apart on ungreased cookie sheet. Flatten with bottom of glass.
Bake 5 to 6 minutes or until edges are light golden brown. Cool 1 minute; remove from cookie sheet to wire rack. Cool on wire rack. Store in airtight container.
*TIME SAVER:
Make cookies as directed...except drop dough by tablespoonfuls about 2 inches apart onto ungreased cookie sheet. Flatten with a sugared glass bottom. (Cookies will be less rounded.)
VARIATIONS:
Use orange food color paste or yellow and red liquid food colors to tint the dough a Halloween orange. You can also roll these cookies in colored sugar before baking.
