Recipe: Mixed Peppers in Oil and Vinegar

MIXED PEPPERS IN OIL AND VINEGAR

1 EACH red, yellow, orange and purple sweet bell pepper*
2 tablespoons olive oil
2 teaspoons balsamic vinegar
Salt and black pepper

Seed peppers and cut into strips.

Heat oil over medium-high heat and add peppers. Cook until just crisp-tender, tossing all the while, about 10 to 12 minutes.

Sprinkle with vinegar and add salt and pepper. Toss to mix.

*If you can't find all colors of peppers, use three red and one small green bell pepper.

Serves 6
