Recipe(tried): Mixed Vegetable Casserole, Easy Banana Pudding, Coke Sirloin Steak, Pear Salad - Hello all...about my last few menus.....
Menus I haven't posted in awhile..I have been busy putting up fresh purple hull peas, butterbeans and tomatoes...a job, if you haven't tried it! My father loaded me down with fresh vegetables, which I am grateful, but it is time-consuming. I have fixed lemon pepper chicken over garlic-herb pasta, candied carrots, fresh green beans, and buttermilk rolls for one meal and served banana pudding(the easy version) for dessert. The next night, I served pan-fried pork chops with mashed potatoes and gravy, mixed vegetable casserole, crescent rolls and pear salad. Tonight I am having coke sirloin steak baked with onion soup, fresh fried okra or squash(I haven't decided yet) and fresh green beans with buttermilk rolls. I am going to have bought Rocky Road ice cream for anyone who has room for dessert. I am going to post a few select recipes...Happy eating all!
Mixed Vegetable Casserole
2 cans mixed vegetables, drained
1/2 cup chopped onion
1/2 cup mayonnaise
1 cup shredded cheddar cheese
salt and pepper to taste
buttered cracker crumbs to top
Mix all ingredients in a greased casserole dish. Top with crushed crackers and dot with butter. Bake on 350 degrees for 35-45 minutes. This is good with meatloaf too.
Easy Banana Pudding
1 small pkg. vanilla pudding
1 can Eagle Brand Sweetened Condensed Milk
1 (8 oz.) container Cool Whip
1 box vanilla wafers
5-7 bananas sliced
In large bowl, mix vanilla pudding according to package directions. Add Eagle Brand Milk and fold in Cool Whip. In a deep bowl, layer cookies, sliced bananas, and puding mixture. End with pudding mixture. Save a few cookies to crumble for topping. Chill at last 2 hours before serving. Delicious!
Coke Sirloin Steak
3-4 lbs. Sirloin Steak
1-2 cups Coke
1 pkg. onion soup mix
salt/pepper to taste
Bake in a roasting pan with lid on 325 for 1 1/2 hours or until done. Can season meat as you like. I do this with roast a lot.
Pear Salad
Drain a can of pear halves.
Place in a shallow dish.
Put a dab of mayonnaise in the center of each half.
Place shredded cheddar cheese over the mayonnaise.
May then top with a cherry half, if desired.
Chill and serve.
