Mock Potato Salad (using cauliflower)

Here's my version:
1 head cauliflower
3 to 4 hard boiled eggs
1/2 cup diced celery
2/3 cup mayonnaise
1 tsp. yellow mustard
1 tsp. fresh dill weed
fresh cracked pepper
salt
Boil the cauliflower for about 8 minutes in salted water. Let cool and cut into cubes. In a separate bowl blend mayonnaise, mustard, dill weed, S&P. Mix together celery, chopped hard boiled eggs and mayo mixture.

I tried the Potato Salad made with cauliflower Sunday and it was THE BEST! I steamed the cauliflower until well done then let it drain well, chopped it and let it sit all night in the refrigerator (in a container on some paper towels for more drainage). Then I added Mayonnaise, onions, pickles, hard boiled eggs and mustard and salt, pepper and dill weed. It was SO GOOD. I literally could not tell the difference from real potato salad. This is truly awesome. The next time I have to bring something to a barbeque, I am going to make this and see if someone notices the difference! - Jan
