Recipe: Spaghetti with Tuna and Spinach (using canned tuna and diced tomatoes)

SPAGHETTI WITH TUNA AND SPINACH

12 ounces spaghetti, uncooked
1 tablespoon olive oil
2 cups sliced onion
4 minced garlic cloves
1/2 teaspoon red pepper flakes
1 (14 1/2 ounce) can diced tomatoes
5 cups chopped fresh spinach
1 (6 ounce) can albacore tuna, drained and flaked
salt and pepper (to taste)
Grated Parmesan (for serving)

Cook spaghetti according to directions, but without using salt or oil; drain.

In a large nonstick skillet, heat olive oil over medium heat. Cook onion, garlic and red pepper flakes for 5 minutes.

Add tomatoes and cook 5 more minutes.

Gradually add spinach. Cook 5 minutes.

Add tuna. Season with salt and pepper to taste. Toss with spaghetti. Serve with grated Parmesan.
