Recipe: Carrot Salad with Oranges and Raisins

Carrot Salad with Oranges and Raisins

From my 1958 Good Housekeeping book of salads

1/2 cup light or dark raisins
1 large orange, peeled, seeded, diced
1 1/2 cups grated raw carrots
1/4 cup mayonnaise
1 tbsp fresh, frozen or canned lemon juice
1 tsp sugar
1/4 tsp salt
lettuce (for servings)

Cover the raisins with boiling water to plump them up. Set aside and drain in 5 minutes. Toss all the ingredients together. Chill, serve on lettuce.

This is MUCH MUCH MUCH better the second day.

We also tossed some slivered almonds on top right before serving.
