Recipe: Moss Cake

Dear Carol,
I found this recipe in an old 1948 cookbook. It is so close that I thought I would send it along. I hope it helps.

MOSS CAKE

14 egg yolks, beaten
1 cup sugar
2 Tbsp. sifted flour
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. ground cloves
3 egg whites, beaten stiff
1/2 pound almonds, chopped

To the egg yolks, add the sugar slowly, beating continuously.

Sift the flour with the baking powder and spices and fold into the egg yolk mixture.

Fold in the egg whites which have been beaten until stiff, but not dry. Stir in the nuts.

Pour into an ungreased 9-inch tube pan and bake in a slow oven, 325 degrees F, for one hour.
