I too have been trying to obtain a complete recipe for this cake for years, I have a little to add to your recipe but not sure if it's completed. What I have follows:
Recipe I have follows and is very similar to your with a few added bits of info:
MOSS CAKE
Preheat oven to 325 degrees F. Grease Angel Food tin and flour it.
Beat together for 15 minutes:
13 egg yolks + 3 whole eggs (16 yolks)
Then add:
1 cup sugar
1 tsp ground cinnamon
1/2 tsp. ground cloves
3 to 4 tbsp. flour
1 tsp baking powder
1/2 cup chopped nuts
Beat until stiff:
3 egg whites
Fold egg whites into the batter.
Place batter in prepared tin.
Bake at 325 degrees F for 1 hour, gradually increasing the temperature to 350F (the next time I try this recipe I plan to increase heat every 15 minutes till I reach 350F).
Frost with powdered sugar frosting.
My biggest issue is how to handle the cake when baking time is done. So far it has collapsed on me every time.
Good Luck Mrs D.
