4 large portobello mushrooms -- sliced 1/2" thick
1 jar your favorite marinara sauce
3/4 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Spray baking dish with nonstick spray. Layer mushrooms, cheeses, and sauce in
the dish, ending with sauce. Bake at 375 degrees for about 40 min. or until
cheese has melted and sauce is bubbly.

Stuffed Portobello Mushrooms

Here's one that is for stuffed mushrooms.
1 each red and yellow pepper, cut into strips
1 sweet onion, cut into wedges
8 portobello mushroom caps
Combine the next ingredients-
1/4 c. white wine vinegar
3 T. olive oil
2 cloves garlic, minced
1/4 c. fresh basil, chopped
1/4 t. salt
Place in a ziploc bag and add peppers and onions. Marinate for 30 min. Add
mushrooms and marinate for 30 more min. in fridge. Remove veggies from marinade
and grill over med. high heat 10 min. Remove mushrooms and place grilled veggies
on 4 mushrooms. Top each with a mozzarella slice. Top with other 4 mushrooms.
Grill until cheese melts. Serve with remaining marinade. Hope you enjoy these.

Portobello Mushroom Fajitas

3 tablespoons lime juice
1 tablespoon olive oil
2 large garlic cloves -- minced
1/2 teaspoon ground cumin
1/4 teaspoon dried oregano -- crushed
3 tablespoons water
10 ounces fresh portobello mushrooms
1 medium red, green or yellow sweet pepper -- cut in thin strips
4 green onions -- cut in 1-1/2" pieces
6 (7") flour tortillas
lime wedges -- optional
1. Combine the lime juice, oil, garlic, cumin, oregano, and water in a large
bowl. Wipe mushrooms with a clean, damp cloth or rinse lightly and pat dry with
paper towels. Remove stems and discard; slice caps 1/4" thick. Add mushrooms,
sweet pepper, and green onions to lime mixture. Toss to coat. Cover and
marinate at room temp. for 15-30 min.
2. Grill veggies on an oiled vegetable grilling tray for 8-12 min. or till
tender and lightly golden, turning once and brushing generously with marinade.
Wrap tortillas in foil and grill over indirect heat for 1-3 min. or till warm.
3. To serve, spoon mushroom mixture onto tortillas; roll up. Serve with lime
wedges, if desired.
