MY MOTHER'S SPAGHETTI SAUCE
1 (28 oz) can tomatoes
3 tsp minced garlic
3 medium sized onions, quartered
1 (28 oz) can tomato sauce
1 (12 oz) can tomato paste
2 tablespoons sugar (for a sweeter sauce, add more sugar)
4 tablespoons grated parmesan cheese
3 oz olive oil
2 tablespoons Italian seasoning
3 packages hot sausage, cut up in bite size pieces (about 18 links total)
A few red pepper flakes (optional)
Hot cooked pasta (any kind, for serving)
Put tomatoes, garlic and onions in a blender. Blend about 30 seconds. Pour into crockpot.
Put tomato sauce, tomato paste, sugar, parmesan cheese, olive oil and Italian seasoning in this same crockpot; mix well.
Pan fry sausage till done; add to crockpot (don't drain, this is what give the sauce its flavor). For a little kick add a few red pepper flakes.
Cover crock pot and cook on HIGH for 1 hour and keep stirring (as needed).
After cooking for 1 hour, turn the crock pot down to LOW and cook (covered) 3 hours more and keep stirring (as needed).
Put on any kind of pasta. Sauce will come out deep red and very good.
