I recently catered an affair and this was the entree...

Scallops Au Gratin Lee

8 T (1 stick) Butter
1/2 c minced onion
2 T flour
dash salt & pepper
1/4 c sherry
1 lb scallops(if using the large sea scallops cut each in half)
1 c finely crumbled crackers combined w/ 1/2 c sharp finely grated cheddar
cheese(I use sharp,white cheddar)

Melt 4 T butter in large heavy skillet. Add onion and saute until softened and
translucient. Slowly add the flour, stirring constantly over low heat. When
flour is blended, gradually add hot milk and blend with a whip over the low heat
until sauce begins to thicken. Remove from heat. Add salt & pepper and sherry,
and continue stirring until all is incorporated.

Add in scallops, 1/2 of the cracker crumb mixture and gently fold until blended.

Place in a lightly buttered, shallow baking dish and sprinkle remaining cracker
crumb mixture on top.

Bake uncovered at 350 f for about 15 minutes or until the top is golden.I hope this helps.
