Electric Skillet Sesame-Ginger Vegetables
1 tablespoon vegetable oil
2 teaspoons sesame oil
2 teaspoons sesame seeds
1 tablespoon ginger root, shredded or 1/4 teaspoon ginger powder
4 medium onions, peeled and sliced
2 medium red peppers, cored and sliced
2 medium zucchini, sliced
4 ounces medium mushrooms, sliced
1 1/2 tablespoons stir-fry sauce
Heat vegetable oil and sesame oil in electric skillet at 375 degrees F. Stir in sesame seeds and ginger root (or ginger powder). Stir in onion, pepper, zucchini, and mushroom slices. Stir in stir-fry sauce. Stir-fry until vegetables are crisp-tender, approximately 1 minute.
