NO BAKE RHUBARB PIE
4 cups finely chopped rhubarb
2 cups sugar
1 (3 oz) box strawberry Jello
1 cup thawed Cool Whip
1 graham cracker crust, baked
Sprinkle sugar over rhubarb and let stand overnight.
Boil rhubarb and sugar until rhubarb is done (about 5 minutes).
Stir in jello until dissolved. Cool.
Fold in Cool Whip. Pour into crust and chill.
