NUTTY BUDDY
FOR THE RICE KRISPIES LAYERS:
1 stick (1/2 cup) margarine, melted
3/4 cup brown sugar
2 1/2 cups Rice Krispies
1 1/4 cups coconut
1 cup chopped nuts
FOR THE FILLING:
1/2 gallon vanilla ice cream
FOR THE CHOCOLATE SYRUP (OPTIONAL):
3/4 cup sugar
3 tbsp. cocoa
Dash salt
2 tbsp. water
1 (5 oz.) can evaporated milk (2/3 cup)
2 tbsp. butter
1 tsp. vanilla
TO MAKE THE LAYERS:
Preheat oven to 325 degrees F.
Melt margarine, stir in brown sugar. Add Rice Krispies, coconut, and nuts. Spread out in large pan.
Bake 30 minutes at 325 degrees. Stir 2-3 times while cooking. Cool.
TO FILL:
For bottom layer, spread half of the mixture in a 13x9-inch pan.
Slice ice cream (long ways) and piece together in a sheet on top of the bottom layer of mixture (in 13x9-inch pan). Cover ice cream with remaining mixture. Freeze.
Frozen treats may be cut in bars, wrapped in plastic wrap and stored in the freezer.
TO SERVE:
If desired, top with chocolate syrup before serving.
TO MAKE THE CHOCOLATE SYRUP:
Mix sugar, cocoa and salt. Add water; mix well, then add milk. Boil over medium heat 3-4 minutes. Stir frequently with wire whisk. Remove from heat and add butter and vanilla.
