I used to make the old fashioned cocoa powder fudge all the time, with no corn syrup or marshmellows or any other junk, and here is my recipe from memory. There may be mistakes but you will succeed in making some delicious fudge.
OLD FASHIONED FUDGE
Mix dry ingredients in 2-3 quart stovetop cooking pot:
3 cups cane sugar
2/3 cup Hershey's Powdered Cocoa
1 teaspoon salt
Add and mix:
1 cup whole milk
Bring to boil, reduce heat to very low, insert candy thermometer and cook to 235 degrees or soft candy stage. Drop a little in a cold cup of water to test. If it solidifies to a soft ball, you are ready.
Take off stove and add:
1 stick (1/2 cup) butter
Set aside and let cool 15 minutes before stirring.
Then add:
1 tablespoon real vanilla extract
Pecan pieces, if desired
Whip with wooden spoon until surface gloss changes to dull, then whip a little more until stiffness starts to set in, and pour into a buttered pan.
