OLLI BOLLEN
This recipe is my Great Grandmothers, who came from Holland in the early 1900's. I found it in my mothers recipe box and I was elated! I have made them several times in the last couple of months and I am in love with them... I have tried preparing them in a few different ways, but good old fashioned deep frying tastes the best. Enjoy!!
4 oz warm beer
1 small green apple, diced
6 oz golden raisins
6 oz black raisins
1 tsp vanilla
1 egg
1/2 cup milk, warmed
1 pkg yeast
1/4 cup sugar, divided use
1 1/4 cups flour
1/8 cup oil
1/2 cup nuts (optional)
dash of salt
Oil for frying
Powdered sugar (for coating)
Warm beer in microwave. Add to warm beer, apples, both raisins and vanilla. Let plump.
In medium bowl whisk egg and milk together well. Warm milk/egg (I use the microwave at 50% power) til lukewarm.
Add yeast and some of the sugar to milk. Whisk, then let sit until frothy.
Add beer/fruit mixture to milk mixture. Add all other ingredients and mix well. Batter should be slightly thicker that pancake batter. Let raise for at least an hour.
Heat oil in a deep fryer or pan to to 350 degrees F. Drop batter in by the teaspoon full. fry til deep golden brown. Remove from oil, place on paper towel to degrease. Roll in powdered sugar. Enjoy!!!
