OLLIEBOLLEN (DOUGHNUTS)
"My husband's family resides in Holland. This traditional recipe is prepared on New Year's Eve." - Contributed by Deborah Manten
4 eggs
1 teaspoon salt
1 1/2 cups white sugar
6 cups flour
6 teaspoons baking powder
1 teaspoon ground nutmeg
4 cups milk
1 1/2 cups currants
1 1/2 cups raisins
vegetable oil (for frying)
icing sugar
Combine eggs, salt and sugar. Beat well; set aside.
Sift flour, baking powder and nutmeg together. Add to first mixture, alternately with milk. Add raisins and currants. Mix well .
Place oil in large saucepan or deep fryer. Bring to approximately 375 degrees F. Drop spoonfuls of batter in hot oil. Deep fry until golden brown. Drain well and dip in icing sugar.
Tester's Comments:
"This might be traditional for New Year's Eve, but it's too good to eat only once a year! If using a saucepan, make sure it's quite deep, and use lots of oil." - Diane Finlayson
