Recipe(tried): One more...Peach Surprise Pie (w/some adjustments)

This one HIGHLY IMPRESSED the in-laws (and we all know how hard that is to do)

2-8 oz. packages cream cheese softened
1/4 c. sugar
1/2 tsp. vanilla
Pastry crust for a 9 inch pie baked (I used a graham cracker crust)
1 16 oz. can peach sliced drained
1 tsp. lemon juice
1/4-1/2 c. flaked coconut
1/4 c. chopped walnuts

Combine the cream cheese, sugar, and vanilla til well blended. Cut up the peach slices and add this to the cream cheese mixture. Add lemon juice. Stir well. Then add the coconut and walnuts. Stir them in very well. (if the batter seems to stiff to work with, add just a very tiny amount at a time of peach juice until it is workable. Pour into crust and chill several hours before serving.

**Note: You may want to reserve some of the peach sliced to garnish top with.
