Maybe this would help? I think you could substitute flounder.
ORANGE ROUGHY WITH APRICOT GLAZE
2 tsp. margarine, melted
4 Tbsp. Apricot Spread (Featherweight Brand)
2 tsp. stone-ground mustard
4 (4 oz. each) Fillets Orange Roughy, or other firm fish
Preheat broiler and 9x9-inch baking pan.
Melt margarine and stir in Apricot Spread and mustard.
Place fish in pan and top with half of glaze.
Broil 5 minutes, then brush on remaining glaze and broil 3 more minutes on same side.
