OVEN BAKED PECAN CHICKEN
1 cup packaged biscuit mix
1/2 teaspoon salt or seasoned salt
2 teaspoons paprika
1/2 teaspoon poultry seasoning
1 cup chopped pecans
1/2 cup evaporated milk
2 to 4 pounds chicken pieces (6 breasts)
1/2 cup melted butter
Preheat oven to 375 degrees F.
In a large bowl, combine biscuit mix, seasonings and pecans. Dip chicken pieces in evaporated milk, then coat well with dry mixture.
Place coated chicken pieces in a 13x9x2-inch baking dish. Pour melted butter in the bottom of the pan.
Bake for 1 hour.
Makes 6 servings
