Oven Beef Stroganoff

Makes 4 hearty servings
Per serving: 768 calories; 6.3 grams carbohydrates
2 Tbsp. butter, divided
2 1/2 lb. boneless sirloin of beef, cut in strips (1x1/8-inch)
1/2 small onion, minced
1 Tbsp. flour
2 tsp. beef bouillon
2 cups hot water
Dash hot pepper sauce
3/4 tsp. salt
1/4 tsp. pepper
1 Tbsp prepared mustard
1 Tbsp. Worcestershire sauce
1 Tbsp. ketchup
1/2 cup sour cream
Cook meat in saucepan in 1 Tbsp. butter, stirring frequently, until it loses its red color. Add onion and cook for another five minutes. Put meat mixture into a casserole. Add remaining 1 Tbsp. butter to saucepan, melt, and blend in flour. Stir in bouillon, hot water, hot pepper sauce, salt and pepper, mustard, Worcestershire sauce and ketchup. Continue cooking until slightly thickened. Beat in sour cream; pour mixture over meat. Bake in a preheated 350 degree oven for 45 minutes.
NOTE: This is an excellent "make ahead" dish. Complete the recipe except for the baking. Cool and store in refrigerator, covered, for up to two days. To serve, bake as directed.
