Recipe: Texas-Style Beef Brisket (low carb)

Texas-Style Beef Brisket

This is a recipe I adapted for low-carb diet requirements that was in an ad from a local organic grocery chain in Denver, CO. It makes 12 3 oz. servings. Very tasty recipe.

3 pounds brisket, trimmed
1 tsp. powdered sweetener for cooking
14 oz. ketchup
1/2 cup water
2 Tbsp. Liquid Smoke
4 Tbsp. Worcestershire sauce
1 Tbsp. dry mustard
2 tsp. celery seed
6 Tbsp. butter, melted
1/4 tsp. cayenne pepper

Prior to cooking, combine all of the following to form a paste:
2 Tbsp. chili powder
1 Tbsp. ground cumin
2 Tbsp. paprika
2 Tbsp. black pepper
1/4 cup bay leaf tea (gently simmer 2-4 bay leaves in 1 cup
water; reduce to 1/4 cup)

2. Rub the paste well into the meat.

3. Place the meat in a preheated 300 degree oven in a covered roasting pan with 1 cup water for 5-6 hours.

4. Using the main ingredients above, mix together to make a sauce.

Spread this sauce over the meat when it has been fully cooked; leave in the oven just long enough to caramelize.
