When I do ribs in the oven, I use a broiler pan. I put the ribs on the rack and
put a bit of water in the bottom of the pan, cover the ribs with foil and bake
at 350 till the ribs are steamed tender. The excess fat and drippings fall in
the bottom with the water and the ribs are tender and juicy without the excess
fat. As if they were grilled. Then I remove the foil, cut the ribs into
individual riblets and baste with whatever sauce I want to use, raise heat to
400 and cook uncovered until they are glazed to perfec
