Recipe: Kielbasa Rice Skillet Dinner (using cream of celery soup, peas and corn)

KIELBASA RICE SKILLET DINNER

1 lb kielbasa, cut into 1/2-inch pieces
3/4 cup uncooked rice
3/4 cup water
1 (10 3/4 oz) can condensed cream of celery soup
1 cup frozen peas
1 cup frozen corn
1 cup grated Monterey jack cheese
1/4 cup milk
ground black pepper (to taste)

In a large skillet with a lid combine 3/4 cup water and soup, add rice and bring to a boil. Stir in kielbasa, cover and simmer over very low heat for 15 minutes; stir occasionally.

Stir in peas, and corn; cover and cook another 12 minutes or until rice is almost tender.

Stir in 1/4 cup milk and cheese. Cover and cook another 3-5 minutes until creamy and rice is soft.

Makes 4 servings
