Painted Desert Cole Slaw

1/2 green cabbage, shredded
1 cup red cabbage, shredded
2 large carrots, shredded
1/2 small Jicama, shredded
1/2 small red onion, finely chopped
1 1/2 cups apple, finely diced

Dressing
1/2 cup mayonnaise
1/3 cup white vinegar
2 tbsp sugar
2 tbsp Dijon mustard
1 1/2 tsp caraway seeds
1/4 tsp salt
pinch of ground black pepper

In a large bowl, combine vegetables and apples, tossing until mixed well. In a small bowl combine all the ingredients for the dressing. Mix thoroughly. Add dressing to vegetables and toss well.
