There have been some lovely tried-and-true cole slaw recipes posted here in the past that might give you some ideas. I am posting a few examples. You can find more by using the search feature for "cole slaw" and clicking on "tried." I hope this helps.

Best Cole Slaw (by Gina/FL)
8-10 servings
2 (10 oz.) pkgs. finely shredded cabbage
1 carrot shredded
1/2 cup sugar
1/2 tsp. salt
1/8 tsp. black pepper
1/2 cup mayo
1/4 cup buttermilk
2 1/2 Tbsp. lemon juice
1 1/2 Tbsp. white vinegar
Combine cabbage and carrot in a large bowl.
Whisk together the sugar and next 7 ingredients. til nicely blended. Toss with the cabbage and carrot. Cover and chill 2 hours.

Cole Slaw Dressing (by SBC 06/1998)
This is my Grandmother's recipe for coleslaw dressing. This is a great dressing recipe and can be used with the already prepared cabbage/slaw mix!
1 cup sour cream
2 Tbsp. lemon juice
2 Tbsp. vinegar
2 Tbsp. sugar
1 tsp. salt
1/2 tsp. pepper
Shred 2 cups of cabbage; grate 1 cup of carrots, Combine with dressing and mix well.
May also be doubled or tripled and also can use reduced fat sour cream without any major changes in taste! Enjoy!

Cole Slaw Dressing (by Pat/AR March 1999)
1/2 cup mayonnaise
1/8 cup tarragon vinegar1/8 cup olive oil
1/2 (very scant) cup sugar
1 tsp salt
I use this for a small bag of precut slaw. Put slaw in dish. Pour over dressing. Allow to set for several hours stirring several times. At first it seems like there is not enough dressing but after the slaw weeps it forms more
dressing.

Old Fashioned Sweet and Sour Cole Slaw (by LoriD/FL April 1999)
1 medium head cabbage (6 cups), chopped
1 cup whipping cream
2/3 cup sugar
1/3 cup white vinegar
1 tsp. salt
Place cabbage in bowl. Cover and chill overnight. In a separate container combine cream, sugar, vinegar, and salt, mix well until frothy. Chill. Just before serving mix dressing into cabbage.
I have also added some shredded carrot or poppy seeds on occasion.
