Recipe(tried): PAM'S BANANA-CRANA-CHOCO-RAMA LOAF

BANANA-CRANA-CHOCO-RAMA LOAF

376 degrees for 35-40 minutes or until toothpick comes out clean

(My son is allergic to nuts, so I experimented with different additives and found this one to be our favorite)

CREAM TOGETHER:
1/3 cup shortening
3/4 cup sugar
3/4 tsp vanilla

ADD:
1 egg well beaten
1 or 2 mashed bananas

SIFT TOGETHER AND ADD (ALTERNATELY WITH SOUR MILK, BELOW):
1+1/2 cup flour
1 tsp baking powder
1/3 tsp salt
1/2 tsp baking soda

ADD ALTERNATELY WITH ABOVE DRY INGREDIENTS:
2 tbsp thick sour milk

STIR IN JUST BEFORE BAKING:
1/2 cup dried cranberries (craisins)
1/2 cup chocolate chips

SPOON INTO GREASED LOAF PAN AND BAKE FOR 35-40 MINUTES AT 375 DEGREES. SPRINKLE WITH ICING SUGAR WHILE STILL HOT.
