Recipe: Papaya Ginger Smoothie (blender or food processor)

PAPAYA GINGER SMOOTHIE

1/2 papaya, peeled, seeded, chopped (about 1 cup)
2 tbsp. chopped fresh mint leaves
1/2 tsp. ground ginger
1 banana
1 1/2 cups ice cubes
1/2 cup vanilla-flavored soy milk
2 tbsp. vanilla-flavored soy protein powder (if desired)

Combine all ingredients in a blender or food processor container. Cover; blend until smooth.

Garnish with additional mint leaves, if desired.

Makes 2 servings

Per serving (with protein powder): 106 calories, 1 g fat, 0 g saturated fat, 0 mg cholesterol, 14 g carbohydrates, 2 g fiber, 12 g protein, 45 mg sodium.
