Recipe: Paprika Schnitzel
Misc. PAPRIKA SCHNITZEL
2 tsp. salt
1/3 cup flour
1 tbsp. paprika
2-(2-lb.) veal steaks
1/2 cup oil
2 cups water
1 cup thick sour cream
Freshly cooked noodles or rice
Mix salt, flour and paprika; pound into veal. Reserve excess seasoned flour. Let steaks stand at room temperature 10 minutes, uncovered. Heat oil in skillet; slowly brown steaks 8 to 10 minutes on each side. Reduce heat; add 1 cup water. Cover tightly; cook slowly until meat is tender about 1 hour. Add remaining water; whisk in remaining flour. Cook 3 minutes; stir in sour cream and reheat. Serve with noodles or rice. Yield: 5-6 servings.
