CHEESE BLINTZES
FOR THE CREPES:
1/2 cup flour, sifted
1 cup milk
3 eggs
pinch of salt
FOR THE FILLING:
3 lb pot cheese (or farmers cheese), strained
1/2 cup sugar
1/2 cup raisins
3 eggs
1 tsp vanilla
sour cream, applesauce or preserves (for serving)
Combine the ingredients for the crepe batter. Pour a small amount of the batter into a skillet and lightly fry on one side only.
Stuff each crepe with small quantity of the filling and fold. Brown on both sides in butter.
Top with sour cream, applesauce or preserves.
For smaller batch: Use 1 lb of the cheese, 1 egg and 1/4 cup sugar, raisins and vanilla to taste.
