Recipe: Pastrami and Pepper Jack Wraps

"Summer calls for quick and easy entrees. These southwestern roll-ups are fun and tasty. Spicy cheese, Southwest greens, and fresh produce give these wraps texture and zest. The secret ingredient is the flavored mayonnaise. They really give these summer sandwiches a kick of extra flavor."
4 flour tortillas (8 to 10-inches) in diameter
1/2 cup chipotle-flavored mayonnaise
12 thin slices deli-style pastrami
8 thin slices Pepper Jack cheese
1/2 head of green cabbage, shredded
1 small red onion, thinly sliced
1/2 cup minced fresh cilantro
Spread a thin layer of the mayonnaise on one side of each tortilla. Place 3 slices of pastrami on each tortilla, and top with 2 slices of the cheese. Sprinkle the cabbage, onion, and cilantro evenly over the pastrami and cheese.
Carefully roll each tortilla into a cylinder shape. Secure the rolls with a toothpick and cut each in half diagonally.
These wraps can be served warm or cold. If serving warm, microwave each wrap on medium-high heat for 1 minute.
Makes 4 servings
