Recipe: Peach Parfait Pie

Hi Suzanne!!
I don't have the exact recipe you're looking for but I did find a Parfait Pie
recipe in "The Joys of Jello" cookbook that my mom left me. Could be a start??
Here goes:

1 3 oz. package gelatin,calls for orange,strawberry,or raspberry(think those
were the only flavors back then :) I would use peach.
1 and 1/4 cups boiling water
1 pint vanilla ice cream
1 baked 8 inch pie shell,cooled
1 cup prepared topping mix in an envelope(optional)

Dissolve gelatin in boiling water. Add ice cream by spoonfuls,stirring until
melted amd smooth. Pour into pie shell. Chill until firm-at least 1 and 1/2
hours. Garnish with whipped topping.

Tip: I would probably add fresh peach slices to the above mixture to give it
more flavor. For the crust that you're looking for, how about mixing melted
milk or semi-sweet chocolate chips and maybe a little sugar for the sweetness.
