Recipe: Strawberry Pear Gelatin (using cream cheese and whipped topping)

STRAWBERRY PEAR GELATIN

1 (29 ounce) can pears, drained, reserve juice
1 (6 ounce) package strawberry gelatin
1 (8 ounce) package cream cheese, cubed
1 (8 ounce) carton frozen whipped topping, thawed
Strawberries or mandarin oranges (optional garnish)

Chop pears and set aside.

Add water to the pear juice to measure 3 cups. Place in a saucepan; bring to a boil.

Transfer heated juice to a large bowl. Add gelatin and stir until dissolved. Whisk in cream cheese until smooth. Refrigerate until slightly thickened.

Whisk in whipped topping until smooth. Add chopped pears. Transfer to a 13-inch by 9-inch by 2-inch dish. Cover and refrigerate until firm.

Cut into squares. Garnish with strawberries or mandarin oranges if desired.

Makes 12-16 servings
