I made these from a Mrs. Fields' cookbook. They were delicious, very sweet.
Peanut Butter Mississippi Mud Bars
8 T. butter
1 cup firmly packed light brown sugar
cup creamy peanut butter
1 large egg, at room temperature
1 T. vanilla extract
1 cup all-purpose flour
tsp. Baking soda
tsp. Salt
8 ounces white chocolate, coarsely chopped and divided in half
8 ounces semi-sweet chocolate, coarsely chopped and divided in half
1 cup coarsely chopped pecans, toasted and divided in half
Preheat oven to 325 degrees F. Butter an 8" or 9" square baking pan, then line with foil and butter foil.
Blend butter and sugar in mixer until smooth at medium speed. Beat in peanut butter until smooth.
In a small bowl, lightly beat egg and vanilla then add to the peanut butter mixture. Combine well.
In another small bowl, whisk flour, baking soda, and salt. Add to the peanut butter mixture and combine well.
Stir in one portion each, white chocolate and semi-sweet chocolate. Then add pecans and combine.
Spread evenly in pan and bake 30-35 minutes, or until center is soft but not runny. Remove immediately and sprinkle rest of chocolate over the top. Cover with foil until chocolate melts. Swirl with a knife, to marbleize, then sprinkle remaining pecans on top.
Cool completely on wire rack.
