Recipe: Peanut Buttered Pork Loin and Indonesian Inspired Pork Roast

PEANUT BUTTERED PORK LOIN

2 boned pork loins (5-6 lbs. total)
1/2 cup orange juice
1/4 cp creamy peanut butter

Roast pork loins at 170 degrees about 3 hours. Combine orange juice and peanut butter. When thermometer reads 170 degrees brush sauce on roast and continue cooking and basting 15 to 20 minutes.

Indonesian Inspired Pork Roast
Serves about 6 persons

1 boneless pork loin roast (2 lbs.)

Coating:
1/4 cup creamy peanut butter
3 tbsp. soy sauce
2 tbsp. ground coriander
1 1/2 tsp. ground cumin
1/2 tsp. chili powder
1 tbsp. fresh, minced garlic
1 tbsp. lemon juice

Peanut Sauce:
1 cup soy sauce
2 tbsp. pineapple juice
1 tbsp. fresh, minced garlic
1/3 cup dry sherry
1/2 tbsp. fresh, minced ginger
1/2 cup chopped, unsalted peanuts

Place roast in a greased baking dish after rubbing coating mix over pork roast.

Bake at 325 degrees until pork reaches 160 degrees (about an hour and 15 to 20 minutes).

In a sauce pan combine ingredients for peanut sauce omitting the peanuts. Bring sauce to a boil then remove from heat.

Add peanuts a few minutes before slicing pork roast to prevent peanuts from becoming soggy.
