Recipe: Pecan Crunch Cake (pecan upside-down cake)

PECAN CRUNCH CAKE

1 1/2 cups sugar
1 cup butter
4 eggs
1 1/2 cups flour, sifted
1/2 teaspoon baking powder
pinch of salt
about 3 drops red food coloring (optional)
ground or finely chopped pecans

Cream together sugar and butter. Beat in eggs, one at a time. Set aside.

Sift together flour, baking powder, and salt. Add to creamed mixture. If desired, gently fold in about 3 drops of red food coloring.

Butter well an 8 or 9-inch baking pan. Cover bottom of pan with the pecans. Pour batter over pecans.

Bake in 325 degree F oven for about 1 hour or until done. Cool in pan about 15 minutes, then turn out onto cake rack, nut side up, to finish cooling.

Makes 1 (8 or 9-inch) cake
