Recipe: Perfect Pizza and Pizza Sauce (food processor)
Pizza/FocacciaPERFECT PIZZA
FOR THE PIZZA DOUGH:
1 cup warm tap water (110 to 115 degrees F)
1 package active dry yeast
3 to 3 1/2 cups all purpose white flour
1/2 teaspoon salt
1 tablespoon olive oil
FOR THE PIZZA SAUCE:
1 (16 oz.) can crushed tomatoes
1 (16 oz.) can tomato paste
1 teaspoon basil
2 teaspoons oregano
1 teaspoon marjoram
1 pinch garlic (peeled, crushed and minced)
1/2 cup water
Toppings and grated mozzarella and/or parmesan cheese (as desired, for topping)
TO MAKE THE PIZZA DOUGH:
Mix above ingredients in a food processor that is capable of mixing dough. Mix at low speed until dough forms a ball. If it's too loose add a little flour. If it's too firm add a little water.
TO MAKE THE PIZZA SAUCE:
Add ingredients for the pizza sauce to a 3 quart sauce pan. Bring to a steady bubble. Turn heat down and simmer for approximately 30 minutes.
Preheat the oven to 500 degrees F and place a baking stone or tile in to heat.
Roll the dough into roughly 10-invh rounds using a pie pin or by pounding and stretching the dough. Sprinkle a light cutting board or pizza peel with cornmeal or semolina and lay the dough down on it.
Spread the pizza sauce over the dough then add any additional desired ingredients. Arrange evenly and sprinkle fresh mozzarella and parmesan cheese over the top.
Bake for ten minutes or until the edge of the crust becomes golden brown and the cheese bubbles in the center.
