Recipe(tried): Perfection Salad (using lime Jell-O)

Salads - Fruit, Gelatin
This is a very old salad recipe, dating from the 1920s-20s.

PERFECTION SALAD

1 (3 oz) pkg lime Jello
2 Tbsp. cider vinegar
1/2 tsp salt
1 cup cold water
1 cup finely shredded or grated cabbage
1/2 cup finely chopped celery
1/2 cup grated carrot
about 6 pimiento-stuffed olives, thinly sliced

Mix Jello with 1 cup boiling water. Add vinegar and salt, then stir in 1 cup cold water and chill until slightly thickened .

Fold in remaining ingredients and chill until set, in mold or square pan.

Makes 6-8 servings
