1 cup of persimmon pulp
1 egg
1 cup flour
1 cup milk
1 cup sugar (I use 3/ 4 cup)
1 Tsp. baking powder
1 Tsp. vanilla
1/2 Tsp. cinnamon
Optional
1/2 Tsp. Nutmeg (or just a dash, Granny Funk used nutmeg)
olive oil (just a few drops will do)
Mix ingredients, pour in a 9 inch pan and bake at 350-375 for 35-45 min.
Time varies with ovens, but make sure top is thoroughly browned.
