Recipe: Picante Sausage Skillet (using regular rice)

PICANTE SAUSAGE SKILLET

1 lb. smoked sausage, sliced
1 medium-size onion, chopped
1 1/2 cups long grain white rice
1 3/4 cups water
1 (1 lb) can stewed tomatoes, chopped
2/3 cup picante sauce (or to taste)
1 tsp. salt
1/2 tsp. chili powder
1 medium-size green bell pepper, chopped

Cook sausage in 12 inch skillet over medium heat 2 minutes.

Add onion, cook, stirring occasionally until tender, about 3 minutes. Drain off any excess grease.

Add rice; mix well. Stir in remaining ingredients, except green pepper. Bring to a boil; reduce heat. Cover and simmer 20 minutes or until liquid is absorbed.

Stir in green pepper. Remove from heat; let stand covered 5 to 10 minutes.

Serve with extra picante sauce.

Makes 6 to 8 servings
