Pina Colada Muffins

THE MAGNOLIA PLANTATION BED & BREAKFAST INN
GAINESVILLE, FLORIDA

1 box yellow or butter cake mix -- (1 pound)
1 teaspoon pure coconut extract
1 teaspoon pure rum extract
1 cup flaked coconut
1/2 cup nuts -- chopped (1/2 to 1)
1 can crushed pineapple -- (8 ounce) with
liquid

Preheat oven to 350 F. Prepare the cake batter according to package directions. Add the remaining ingredients to the batter and mix for 1 minute. (Do not over-mix.)

Fill greased muffin cups 3/4 full and bake for 15 to 20 minutes or until golden. Let cool on wire racks. Serve.

YIELD: 24 MUFFINS
