Baked Potato Casserole

Serves 4-6

3 cups leftover mashed potatoes -- OR
instant mashed potatoes
2 tablespoons flour
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup sour cream
2 tablespoons chopped chives
1 egg -- slightly beaten
1/2 cup shredded Swiss cheese
4 slices bacon -- cooked/crumbled

Mix potatoes, flour, salt and pepper.

Spread in greased 9x9" microwave dish. Mix sour cream, chives and egg. Spread over potato mixture. Sprinkle with shredded cheese and crumbled bacon.

Microwave for 8 minutes or until set. (Center will be more moist than edges.) Spoon out to serve.

In regular oven: Bake at 350 F. for 25-30 minutes. Cut in to squares.
