Recipe: Pineapple Jam
Misc.I realize you've probably used your pineapple but I'll post this anyway in case you get some more & want to try this
Title: PINEAPPLE JAM
Categories: Fruits, Jam, Untried
Yield: 1 lb
10 oz Fresh pineapple, bite-size
1/2 c +1T Pineapple juice
1 oz Arrowroot
4 t Honey
Bring pineapple, honey & juice to boil, then simmer 10-15mins till
fruit is quite soft. Remove from heat & mash. Mix arrowroot with
just enough water to make a thin white paste. Add to pineapple &
simmer on low heat another minute or so, stirring constantly till the
jam is set & the arrowroot has turned completely clear. Pour into
sterilised jars & leave to cool. When quite cold, refrigerate.
