Recipe(tried): Pizza Night - Pizza (including pizza dough recipe)

Tonight I will be fixing pizzas. I usually double the recipe so I can make 2 pizzas - 1 for my DH and I, the other for the kids since they like different toppings than we do. I mix the dough with my hand held mixer with dough hooks. The original recipe says to use a 9x13 inch pan but I only did that once but didn't like the results - the bottom was too soggy. I have 2 large perforated pizza pans and use that with good results.
PIZZA DOUGH
1 pkg of dry yeast (can use rapid rise)
1 cup warm water
1 teaspoon sugar
1 teaspoon salt
2 Tablespoons oil (can use veg oil or olive oil)
2-1/2 cups flour
Dissolve yeast in water, add other ingredients and beat for 20 strokes. (I use my hand held mixer) Let rest for 5 minutes. Spray pan with Pam and press dough over bottom and sides.
NOTE-The dough is sticky, so I either spray my hands with PAM, or add more flour to the dough.
PIZZA
8 oz pizza sauce
8 oz shredded mozzarella cheese
After pressing pizza dough on pan, cover with pizza sauce and toppings. Bake at 425 degrees for 20-25 minutes.
My favorite pizza topping - crumble and brown Italian sausage in skillet, add chopped onion and sliced green peppers and saute till vegetables are tender and then add 1 can of drained mushroom pieces.
