Recipe: Pizzettes (Mini Pizza Appetizers)

"These mini pizza appetizers can be made with any of your favorite pizza toppings, although I like fresh buffalo mozzarella, a halved cherry tomato, fresh basil, olive oil and a sprinkle of salt. Be sure to roll the dough thinly or you will end up with a few delicious but puffy pizzettes, rather than 30 regular-size ones."
1 (12 ounce) ball purchased pizza dough
5 ounces gorgonzola, fontina or other Italian cheese, crumbled or grated
5 ounces cherry tomatoes, quartered
1 tablespoon extra-virgin olive oil
1/3 cup fresh basil leaves, torn into pieces
Salt and freshly ground pepper
Preheat oven to 475 degrees F.
Roll out pizza dough into a 1/8-inch-thick round. Using a 2 1/4- to 2 1/2-inch-diameter cookie cutter, cut out 30 dough circles.
Arrange circles on 2 large, heavy baking sheets. Sprinkle cheese over circles. Top with the tomatoes, pressing them gently into the dough.
Bake until pizzettes are golden brown, about 10 minutes.
Drizzle pizzettes with olive oil, then sprinkle with basil, salt and pepper. Arrange on a platter and serve immediately.
Makes 30 pizzettes, 8-10 servings
