Oven Roasted California Plums
BAKED PEACHES AND PLUMS
2 tsp. fresh ginger, grated
1 lb. peaches, peeled, pitted and cut into thick slices
3/4 lb. plums, pitted and cut into thick slices
1 cup apple cider
2 Tbs. sugar
1/2 lb. almond cookies, crumbled
2 cups strawberry ice cream
Preheat oven to 375 degrees F.
Combine first 5 ingredients in a bowl. Mix thoroughly and transfer to a shallow baking dish. Sprinkle with crumbled almond cookies.
Bake 45-50 minutes or until fruit mixture is syrupy.
Serve ice cream over baked fruit.
