Recipe: Potluck Slaw (using navy beans, peas, and Italian dressing) (serves 12)

POTLUCK SLAW

1 small head green cabbage
1 (15.5-ounce) can navy beans, drained and rinsed
2 green onions, chopped
2 ribs celery, chopped
1 (16-ounce) bottle Italian dressing
1/2 cup vinegar
1/2 cup white sugar
2 tablespoons canola oil
2 cups frozen green peas

Rinse the outside of the cabbage with cold running water. Discard and trim any discolored leaves or portions of the head. Chop cabbage to fill an 8 to 10 cup bowl. Add the beans, green onions, and celery.

Pour dressing, vinegar and sugar over salad. Stir and taste. Adjust vinegar and sugar if desired. Refrigerate.

Add frozen peas, stir salad. Transport in a cooler on ice. (If serving immediately, peas may be thawed before adding to salad.)

Makes 12 servings (1/2 cup each)
