This is probably too late for tonight's dinner but here are a couple of suggestions for next time.
I like to slice Polish Sausage, Kielbasa or Hot Dogs in about 1-inch thick discs then fry with bell pepper and onion that have been cut in squares. I start the bell pepper ahead of the onion and add the onion when the peppers just start to soften. Fry potato cubes in a separate pan and when they're almost done add to the sausage mixture to finish. Baked apples or applesauce are a good side dish for this.
Another way to use the sausage-pepper-onion mixture is to add canned whole, diced or stewed tomatoes (drained) when the peppers and onion are almost done and simmer to heat and thicken the mixture. Add some chopped fresh parsley if you have it or season it with Italian herbs, to taste. Serve with crusty bread.
